Kiritsuke literally means "slit open". This blade is widely used in Japanese cuisine. Traditionally the knife was used only by the executive chefs. Kiritsuke blades and can be used as a Yanagi (fish slicer) or an Usuba (vegetable knife). These sword-shaped knives feature a straighter edge than a Yanagi for vegetables and a longer blade than an Usuba for slicing fish with ease.

The Kiritsuke, a classical Japanese blade. Traditionally only used by executive chefs. I can understand why. The long blade makes it harder to control if you aren't used to handling larger knives. I use this blade when fine slicing fish and meat. I can suggest this knife to home-chefs who want to take their skills to the next level or already experienced chefs who know how to handle this type of blade.
