Kiritsuke literally means "slit open". This blade is widely used in Japanese cuisine. Traditionally the knife was used only by the executive chefs. Kiritsuke blades and can be used as a Yanagi (fish slicer) or an Usuba (vegetable knife). These sword-shaped knives feature a straighter edge than a Yanagi for vegetables and a longer blade than an Usuba for slicing fish with ease.

Igor's thoughts:

The Kiritsuke, a classical Japanese blade. Traditionally only used by executive chefs. I can understand why. The long blade makes it harder to control if you aren't used to handling larger knives. I use this blade when fine slicing fish and meat. I can suggest this knife to home-chefs who want to take their skills to the next level or already experienced chefs who know how to handle this type of blade. Just like the cleaver knife, the Kiritsuke easily becomes a staple of every kitchen because of the size and beautiful Damascus pattern of the blade.

The Kiritsuke knife from Sapega's Seijaku Fusion Series is a Japanese chef knife with a hand-forged blade made from a VG-10 steel core encased by 67 layers of high-carbon Damascus stainless steel, providing exceptional strength, durability, and stain resistance. The blades created in this way are extremely hard. The high-quality materials combined with elaborate manufacture make the Kiritsuke from Seijaku Fusion Series a very durable knife for your collection.

Its scalpel-like sharpness comes from a unique honing technique. where the blade is sharpened twice by hand on rotating stones and then polished on a leather wheel. This so-called Honbazuke honing gives the Kiritsuke its extreme sharpness. Knives created using this technique are characterized by their excellent cutting-edge. All our knives come in Honbazuke condition. Meaning 'with a true edge'.

Both the 23 cm blade and the handle are characterized by an attractive appearance and exceptional functionality. The ergonomic handle of ebony wood is a perfect finish to the high-quality steel blade, with a different grain of wood used for each knife, resulting in a truly unique product. The custom design end cap and subtly styled mosaic pin complete the knife's elegant look and are a key design feature of the Seijaku Fusion Knife Series.
