One of my top 3 favorite knives. The weight of the Nakiri knife makes it a perfect tool for chopping different kinds of food. The Damascus steel of our Nakiri knife and the shape of the blade makes it stand out and becomes a staple of every kitchen. I recommend this knife for every skill level, and especially does who aren't only looking for a good knife but a piece of art as well.

 

This is a Japanese-styled vegetable cleaver, not a Western-style meat cleaver. Western-style meat cleavers use thicker, more robust blades for tougher jobs like cutting and de-boning meat.

Japanese-style knives are usually made with finesse and have a thin blade. Every blade in Japanese cuisine has its function and a place of use.

The scalpel-like sharpness of its 18cm blade comes from a unique honing technique. where the blade is sharpened twice by hand on rotating stones and then polished on a leather wheel. All our knives come in Honbazuke condition. Meaning 'with a true edge'.

 

The ergonomic handle of ebony wood is a perfect finish to the high-quality steel blade, with a different grain of wood used for each knife, resulting in a truly unique product. The custom design end cap and subtly styled mosaic pin complete the knife's elegant look and are a key design feature of the Seijaku Fusion Knife Series.
