The Santoku is one of my top three favorite knives due to its versatility and ease of use. I use this knife daily for chopping, dicing, and slicing meat, fish, and vegetables.

 

I understand why this shape of the blade is the number one sold in all of Japan. 

I recommend it for every skill level, and if you are looking for a good first knife that will last you a lifetime and help you perfect your culinary arts, then this is the one.

Bread Knife

I use this knife daily. Obviously, it works great for cutting bread but it has some other areas where it shines.

 

Tougher food such as different types of melons, pineapple, and other fruits and vegetables that are larger in size. Straight-edged knives usually get trapped in such foods and can pose a cutting hazard to any chef.

 

The serrations along its long cutting edge, make it act just like a saw and lets you easily slice through food as you move the knife back and forth.

Fun fact, my college dad always insists on using a bread knife no matter what food he prepares, or what we tell him. We never eat at his place anymore.

The Utility knife is one of my top three favorites.

This is my go-to knife for regular day to day activities.

Cutting cheese, ham, fruits, and vegetables of all sorts.

 

You see, I like to do smoothies and shakes so its smaller shape makes it easy to use and to clean, perfect for fast usage.

 

Combined with the Honbazuke honing that is done on the blade makes this knife sharp and slices easily through standard food supplies.

The Kiritsuke, a classical Japanese blade. Traditionally only used by executive chefs. I can understand why. 

The long blade makes it harder to control if you aren't used to handling larger knives. I use this blade when fine slicing fish and meat.

 

I can suggest this knife to home-chefs who want to take their skills to the next level or already experienced chefs who know how to handle this type of blade.
