Santoku

The Santoku is one of my top three favorite knives due to its versatility and ease of use. I use this knife daily for chopping, dicing, and slicing meat, fish, and vegetables.

I understand why this shape of the blade is the number one sold in all of Japan.

I recommend it for every skill level, and if you are looking for a good first knife that will last you a lifetime and help you perfect your culinary arts, then this is the one.

Bread Knife

I use this knife daily. Obviously, it works great for cutting bread but it has some other areas where it shines.

Tougher food such as different types of melons, pineapple, and other fruits and vegetables that are larger in size. Straight-edged knives usually get trapped in such foods and can pose a cutting hazard to any chef.

The serrations along its long cutting edge, make it act just like a saw and lets you easily slice through food as you move the knife back and forth.

Utility Knife

The Utility knife is one of my top three favorites.

This is my go-to knife for regular day to day activities.

Cutting cheese, ham, fruits, and vegetables of all sorts.

You see, I like to do smoothies and shakes so its smaller shape makes it easy to use and to clean, perfect for fast usage.

Combined with the Honbazuke honing that is done on the blade makes this knife sharp and slices easily through standard food supplies.

Recommended for every kitchen and skill level. A must-have for day to day kitchen activities.

ВЕЛИКОЛЕПНОЕ КАЧЕСТВО И ПРЕВОСХОДНОЕ ХУДОЖЕСТВЕННОЕ ИСПОЛНЕНИЕ

Chef Knife

The chef knife is one of the most common blades you will find in a western kitchen.

It's a perfect all-around knife designed to perform well at many different kitchen tasks, rather than excelling at anyone in particular.

It can be used for mincing, slicing, and chopping vegetables and meat.

I recommend this knife for every skill level.

Kiritsuke

The Kiritsuke, a classical Japanese blade. Traditionally only used by executive chefs. I can understand why.

The long blade makes it harder to control if you aren't used to handling larger knives. I use this blade when fine slicing fish and meat.

I can suggest this knife to home-chefs who want to take their skills to the next level or already experienced chefs who know how to handle this type of blade.

Just like the Nakiri knife, the Kiritsuke easily becomes a staple of every kitchen because of the size and beautiful Damascus pattern of the blade.

Big Knife Set

The Seijaku big knife set is the perfect choice for those who want to take their cooking to the next level with a knife for every situation.

Santoku for cutting meat, fish, and vegetables.

Bread knife for bread, or tougher fruit and vegetables.

Utility knife for smaller tasks and more intricate work.

Chef knife is a good all-around just like the Santoku.

Kiritsuke to take your culinary skills to the next level.

For the home chef that wants a distinct knife for every situation.

Matt Jenkins - The Fat Duck

I recently had the pleasure of handling and sampling a couple of the knifes. They feel like luxury items and are balanced beautifully. It is clear that precise care have gone into the whole process of crafting these incredible blades. They have quality emblazoned all over them. My solid recommendation goes with these knives.

Lara Norman - Claudi Bosi at Bibendum

Excellent service, great products, and fantastic value. I have purchased several knives from the Sapega collection and I am still amazed at the quality, how sharp and retention of sharpness, as well as the beauty of these knives and blades. They are very well balanced and easy grip. Cuts like a Samurai sword.

Clyde Wernli - Head chef  Montague on the gardens

I purchased a chefs knife from Sapega knives. So far it has been a great addition to my knife set, I haven’t had to sharpen it yet and it still cuts the same as the day I bought it. For anyone looking for a knife, give these knives a try and you won’t regret it.

Nakiri Knife

One of my top 3 favorite knives.

The weight of the Nakiri knife makes it a perfect tool for chopping different kinds of food.

The Damascus steel of our Nakiri knife and the shape of the blade makes it stand out and becomes a staple of every kitchen.

I recommend this knife for every skill level, and especially those who aren't only looking for a good knife but a piece of art as well.

Paring Knife

This knife is perfect for that intricate peeling that smaller fruits and vegetables put you through. It also works great for peeling potatoes and onions.

There are different kinds of paring knives. I chose this type of blade with the crooked edge for the delicate times and the versatility it offers.

I can recommend it for every kitchen and skill level.

Master chef bundle

The Master chef bundle speaks for itself.

No matter what dish you want to prepare you'll have the right knife for the right situation.

Nakiri knife for chopping vegetables and boneless meat.

Paring knife is ideal for cutting, cleaning, and peeling fruit and vegetables.

The master chef bundle has every knife in the Seijaku Fusion series and will make you a true master of your own kitchen.

The Mission

The mission of becoming one of the most renowned deaf chef's in the world has a lot of milestones. Making knives for people all around the world to enjoy has been one of my dream goals.

My own designed "Seijaku" Knives represent silence and calm. Just like in my world, noise is not a factor, making it easy to stay relaxed in stressful situations.

That feeling is something I want to share with you. The calm you should feel in the kitchen when you cook food for yourself and your loved ones.

Making food is something almost sacred, and sharing a great meal with people is one of the greatest bonding experiences in the world if you ask me.

Having the right gear is essential for creating a delicious meal, with the kitchen knife being the most important.
